The history of olive oil in Byzacena does not begin with industrial modernity. Its roots run deep into antiquity, when the Carthaginians were already codifying agricultural practices with remarkable precision.

In the 3rd century BCE, Mago the Carthaginian, a great agronomist from Carthage, wrote a monumental treatise on agriculture. His work, later translated into Latin by order of the Roman Senate, became a reference throughout the Mediterranean world. It described land selection, planting spacing, olive tree pruning, and extraction methods. Already, agronomic rigor was at the heart of the process.

Planting: The Intelligence of Living Things

In antiquity, planting an olive tree was not a simple agricultural gesture. It was a strategic act.

Mago recommended:

  • the choice of well-drained and well-exposed soils,
  • spacing that allowed the tree to breathe and capture light,
  • pruning methods to encourage fruiting.

Today, these fundamental principles remain. Tunisian orchards — especially those dedicated to the Chemlali variety — adhere to this logic of adaptation to the terroir: arid climate, intense sunlight, low rainfall.

For centuries, harvesting was done by hand or by beating the branches with sticks, with nets placed under the trees. Speed was already essential: a bruised or overripe olive alters the quality of the oil.

Today, early harvesting — a hallmark of premium oils — occurs when the olive is still green. The oil yield is lower, but the concentration of polyphenols is higher.

Modernity lies in:

  • the perfect synchronization between harvesting and milling,
  • the drastic reduction of delays (only a few hours),
  • the control of transport conditions to prevent any oxidation.

Where antiquity sought purity through empirical knowledge, our era guarantees it through scientific control.

Extraction: From Stone Mill to Stainless Steel

Early extractions used stone mills and mechanical presses. The olive paste was crushed, then slowly pressed to extract the juice. Natural decantation separated the oil from the water.

This ancestral process had one merit: it respected the raw material.

Modern technology maintains this philosophy while eliminating the risks of alteration:

  • controlled crushing,
  • malaxation at controlled temperature (cold extraction),
  • centrifugation in a closed circuit,
  • absence of excessive oxygen.

The objective remains unchanged since Mago: to preserve the aromatic integrity of the fruit. Only the precision has been refined.
